HONEY-BUTTER THINS & ICE-CREAM SANDWICHES

- 1 cup Salted butter -
- 1 3/4 cups Sugar -
- 1 teaspoon Baking Soda -
- 1 teaspoon Cream of Tartar -
- 1/4 teaspoon Salt -
- 1/4 cup Honey -
- 3 egg Yolks -
- 1 teaspoon Vanilla -
- 2 1/4 cups All-Purpose Flour -
- 1 3/4 cups Sugar -
- 1 teaspoon Baking Soda -
- 1 teaspoon Cream of Tartar -
- 1/4 teaspoon Salt -
- 1/4 cup Honey -
- 3 egg Yolks -
- 1 teaspoon Vanilla -
- 2 1/4 cups All-Purpose Flour -

How to make 'em :
1. Preheat oven to 325 degrees(F). Line two cookie sheets with parchment paper.

2. In a large bowl, beat the butter until it is nice and smooth (Mixer recommended). Add your sugar, baking soda, cream of tartar, and salt. Beat until everything is combined. Next, mix in the honey, egg yolks, and vanilla. Beat everything together, and then mix in your flour.

3. Shape the dough into 1-inch balls. Roll the balls in some additional sugar and arrange them 2 inches apart on your prepared cookie sheets. Bake for 10-12 minutes, or until the edges are set and slightly browned.

4. Allow the cookies to cool on the cookie sheet for about 2 minutes. Remove and then let them completely cool.

EXTRA STEP FOR ICE-CREAM SANDWICHES
5. Freeze your cookies until they firm, about 15 minutes. Sandwich your choice of ice-cream in between two cookies.
